In the absence of any eggs, bacon or sausages I was forced this weekend to move away from my traditional Saturday breakfast and work with what I had in the fridge. Fortunately there were some large mushrooms which looked like they wanted to be eaten with some cheese and ham…
Ingredients: (for two people)
- Four large flat mushroom
- Four slices of garlic
- Handful of grated cheese
- Chopped ham
- Oregano
- Salt and pepper
Cook it:
- Melt plenty of butter (say, 10g) in a frying pan and once the pan is hot place the mushrooms under-side down on top of the pieces of garlic. Also add some halved tomatos to the pan, coated with a little olive oil
- Meanwhile you can grate the cheese etc
- When the mushrooms are cooked on the underside, turn them over and lose the garlic. Stuff some ham in the middle, add the cheese on top, along with a sprinkling of oregano
- Continue to cook the otherside of the mushrooms
- When the mushroom is fully cooked, put the pan under the grill and brown the top
- Serve on toast, with a bit of parmesan on top if you have it
I’m not sure there’s a place for cheese on my breakfast plate. What is also nice is just brushing a couple of field mushrooms with oil, sprinkling with a bit of salt and pepper and oregano (good choice Clarkie, oregano makes mushrooms great) and just grilling them. As I discovered with asparagus, thanks to Mr Oliver, grilling veg makes them taste very different. White pepper also gives them a different and good flavour…

Start) Goat’s cheese salad; some kind of terrine; or some kind of smoked salmon with cheese arrangement
Main) Steak with blue cheese sauce and cauliflower cheese on the side
Fini) Cheesecake followed by cheeseboard
Or is that a bit OTT?
